Rasid AFFILIATION : Faculty of Chemical Engineering, Universiti Teknologi MARA ABSTRACT : Papaya leaf extract is associated with numerous medicinal properties such as antioxidant, anti inflammatory and antidiabetic. It also commonly consumed as complementary therapy for dengue infection. These properties are contributed by its polyphenolic compounds. Nevertheless, these compounds have low bioavailability in human metabolic system. Additionally, raw papaya leaf extract has an awful bitter taste and usually consumed with other fruit juice. Naturally, fermented papaya leaf is a novel product that offers better palatability, enchanced bioactivity and additional probiotic component. Better palatability is the result of natural enzymatic breakdown of polyphenols into a more digestible and bioavailable forms while its probiotic components produces essential micronutrient for general health and improves shelf stability. These characteristics present a highly functional product for general well-being supplement and complementary dengue therapy that are superior than conventional papaya leaf extract.
